In the frying pan, the crust gets very crispy just like the oven. The difference is that in the frying pan, the cheese gets melty, while the oven tends to dry it out in my experience. A trick some people use is putting a few drops of water in the frying pan to keep the cheese moist from the steam, but I don’t think that’s necessary.
