Used oil, I assume.
Don't you guys have a process for getting rid of it?
I know most restaurants recycle and sell it to companies who process it.
Why would you want to keep the old stuff unless you are cutting corners and reusing it but then the food is going to taste nasty.
 
Does this have to do with bio diesel? Aren't there people making fuel from used oil they get from fast food places and the like? This sounds like the opposite of best practice.

I have a neighbor that does that with an old VW, sometimes BBQ, sometimes Mexican you can tell where he fueled up as he drives by.
 
I'm a nationally certified food safety manager, and to my knowledge, as long as it's properly stored (meaning in sealed, labeled containers stored on racks 4-6" off the floor,) it's not a health code violation. If they don't go through a lot of oil, they might only have pickup of used oil once a month.
 
Used, yeah. It sits there until she can find someone to pour it out into the bin in the back. Thanks, Jill.
 
What's he doing with? Just not having it picked up? You'd want to get rid of it as soon as you can, but like Jill said, as long as it is properly stored then it's not against health codes.
 
Just saw the new post. If there's a bin in the back, it should be getting emptied daily (at the very least every couple of days). If it's used oil in an open container, then it could be attracting pests. No reason to keep it in a food area when there is a disposal bin out back. Emptying should be part of the routines.
 
Closed bins, off the floor. So technically she is covered. She just waits until there are about 20 of them in storage before delegating to pour them out back.
 
Really. 20 buckets. Why the wait.

Being a former Cart Attendant and Food Ave, I walked the Food Ave fryer grease to the rear of the building to the grease trap. We just reused the empty popcorn oil buckets. Once we got about 3-4 buckets, I just laid cardboard down in a tub and dumped the grease behind the docks.

At the one Super, I was a cart attendant and I would dumped FA's grease once a week. Usually in the grease bucket or a popcorn oil can. Deli dumped their own grease.
