When a customer requests a gift receipt should I ring up those items separate?

No need too. Just a heads up in case you didn’t know you cannot do a gift receipt for gift cards of any kind. Over the years I’ve had plenty of guests ask but, it cannot be done. I’ve even had guests decide not to buy a gift card because they couldn’t get a gift receipt.
 
A gift receipt is a generic barcode. It doesn't say how much you paid or how many items are on the gift receipt. If someone returns an item with a gift receipt, the barcode is scanned and the item is scanned and if that item or items are on the gift receipt it offers a refund of the purchase price in the form of a target gift card. A gift receipt with 30 other items would look identical to one with only the gift item on it.
 
The last time I backed up at the check lanes you could select items in a transaction for which you wanted gift receipts. Also may not be able to print a gift receipt for a gift card but can print a balance slip for it.

I don’t think you can print a balance slip anymore.
 
During the transaction there *used* to be an option to add a gift receipt for each item selected. If it was more than one it could either combine the items or print multiple receipts. I'm in SB/PH so we don't get those requests 🙁
 
Selecting "print gift receipt" generates a bar code for the entire transaction. Individual items are not listed. The print receipt is interchangeable for anything in that transaction.

FYI as for Target gift cards, there is a separate "Inquiry" app for checking a gift card balance and if desired printing out the balance for the guest.
For non-Target gift cards and prepaid Amex/Mastercard/VISA cards, there is nothing available to print the balance. Those are nonrefundable. Guests with questions need to call the contact number on the back of the card.
