No, these count as business expenses and aren't included in profit. (Just like Target doesn't count the selling price as profit, only the amount over the cost of goods sold, labor, overhead, blah-blah.)If you are spending your profits on gas and maintenance you might not ever afford a new car
Anyway, it's not like a Shipt shopper or an Uber driver is going to make a ton of money, even if they devote a lot of time to it. I've read the same is true for some at-home online jobs. For someone who needs a super-flexible second job and maybe doesn't have the qualifications for higher paying work, it can be a way to fill in some gaps.
